Introduction to Korean Patbingsu

Patbingsu (팥빙수) is a popular Korean shaved ice dessert that has been enjoyed for centuries. Preparation of Red Bean Paste

1. Rinse the dried red beans thoroughly in cold water.

4. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
5. Drain the beans, reserving about 1 cup of the cooking liquid.

7. Return the bean paste to the pot and add sugar and salt.

4. Place a scoop of ice cream in the center.
5. Arrange fresh fruits around the ice cream.
6. Add rice cakes, crushed cereal, and whole adzuki beans.
7. Drizzle with additional condensed milk if desired.
8. Serve immediately with a spoon.
