Ingredients
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into wedges
- 8-10 cherry tomatoes
- 8-10 button mushrooms
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
Step 1: Prep the Vegetables
Wash and dry all the vegetables thoroughly. Cut the bell peppers, zucchini, and red onion into evenly sized chunks to ensure even cooking.
Step 2: Season the Veggies
In a large bowl, toss the vegetables with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
Step 3: Assemble the Skewers
Thread the vegetables onto skewers, alternating colors and textures for an appealing look. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
