Vegetarian Macadamia Nut Bars
Ingredients
- 1 ½ cups macadamia nuts, roughly chopped
- 1 cup rolled oats
- ½ cup coconut flakes
- ½ cup almond butter
- ¼ cup maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- ¼ tsp sea salt
- ½ cup dairy-free dark chocolate chips
Instructions
Prepare the Base
In a mixing bowl, combine the macadamia nuts, rolled oats, and coconut flakes. Stir to distribute evenly.
Mix Wet Ingredients
In a separate bowl, whisk together the almond butter, maple syrup, melted coconut oil, vanilla extract, and sea salt until smooth.
Combine and Press
Pour the wet mixture into the dry ingredients and mix well. Fold in the dark chocolate chips, then press the mixture firmly into a lined 8x8-inch baking pan.
Chill and Set
Place the pan in the refrigerator for at least 2 hours to allow the bars to set. Once firm, cut into squares and serve.
Tips
- For extra crunch, toast the macadamia nuts and oats before mixing.
- Store in an airtight container in the fridge for up to 1 week.
- Drizzle with melted chocolate for an indulgent finish.
