Vegetarian Tomato Basil Soup

Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 2 pounds (about 900g) fresh tomatoes, chopped
- 1 tablespoon tomato paste
- 4 cups vegetable broth
- 1 teaspoon sugar (optional)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup heavy cream or coconut milk (for a vegan option)
Instructions
Step 1: Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.
Step 2: Cook the Tomatoes
Add the chopped tomatoes and tomato paste to the pot. Stir well and cook for 5–7 minutes, allowing the tomatoes to soften and release their juices.
Step 3: Simmer the Soup
Pour in the vegetable broth and add the sugar, dried oregano, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20–25 minutes, stirring occasionally.
Step 4: Blend and Add Basil
Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth before returning it to the pot. Stir in the chopped fresh basil.
Step 5: Finish with Cream
Return the pot to low heat and stir in the heavy cream or coconut milk. Heat gently for another 2–3 minutes, ensuring the soup doesn’t boil. Adjust seasoning with salt and pepper if needed.
Step 6: Serve
Ladle the soup into bowls and garnish with extra fresh basil leaves. Enjoy hot with a side of crusty bread or a grilled cheese sandwich!
Notes
For a richer flavor, you can roast the tomatoes with a drizzle of olive oil before adding them to the soup. If you prefer a thicker consistency, simmer the soup for a few additional minutes after blending.
