Vegetarian Veggie Spring Rolls

These delicious vegetarian spring rolls are packed with fresh vegetables and serve as a perfect appetizer or snack. Serve them with a sweet and spicy dipping sauce for the ultimate flavor experience!

Ingredients

  • 1 cup shredded carrots
  • 1 cup finely sliced bell peppers (red, yellow, or green)
  • 1 cup thinly sliced cucumber
  • 1 cup shredded cabbage
  • ½ cup chopped fresh cilantro
  • ½ cup sliced green onions
  • 1 package of rice paper wraps
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine shredded carrots, bell peppers, cucumber, cabbage, cilantro, green onions, sesame oil, salt, and pepper. Mix well until all vegetables are combined.
  2. Fill a large shallow dish with warm water. Dip one rice paper wrap into the water for about 10-15 seconds until it becomes soft and pliable.
  3. Place the softened rice paper on a clean surface. Spoon about 2 tablespoons of the vegetable mixture onto the lower third of the wrap.
  4. Fold the sides of the wrap inwards, then roll it tightly from the bottom up to enclose the filling.
  5. Repeat the process with the remaining rice paper wraps and vegetable mixture.

Dipping Sauce

For a quick dipping sauce, mix together:

  • 2 tablespoons soy sauce
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon chili flakes (optional)

Serving Suggestions
