Vegetarian Veggie Spring Rolls
These delicious vegetarian spring rolls are packed with fresh vegetables and serve as a perfect appetizer or snack. Serve them with a sweet and spicy dipping sauce for the ultimate flavor experience!
Ingredients
- 1 cup shredded carrots
- 1 cup finely sliced bell peppers (red, yellow, or green)
- 1 cup thinly sliced cucumber
- 1 cup shredded cabbage
- ½ cup chopped fresh cilantro
- ½ cup sliced green onions
- 1 package of rice paper wraps
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine shredded carrots, bell peppers, cucumber, cabbage, cilantro, green onions, sesame oil, salt, and pepper. Mix well until all vegetables are combined.
- Fill a large shallow dish with warm water. Dip one rice paper wrap into the water for about 10-15 seconds until it becomes soft and pliable.
- Place the softened rice paper on a clean surface. Spoon about 2 tablespoons of the vegetable mixture onto the lower third of the wrap.
- Fold the sides of the wrap inwards, then roll it tightly from the bottom up to enclose the filling.
- Repeat the process with the remaining rice paper wraps and vegetable mixture.
Dipping Sauce
For a quick dipping sauce, mix together:
- 2 tablespoons soy sauce
- 1 tablespoon honey or agave syrup
- 1 teaspoon chili flakes (optional)
