Cherry Clafoutis is a classic French dessert that combines fresh cherries with a custard-like batter. Traditionally made with unpitted cherries (which are believed to add a subtle almond flavor), this recipe uses pitted cherries for convenience.

Ingredients

  • 1 cup (about 150g) fresh cherries, pitted
  • 3 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (60g) all-purpose flour
  • 1/8 teaspoon salt
  • 1 cup (240ml) whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon (15g) unsalted butter, melted
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the Oven

    Preheat your oven to 350°F (175°C).

  2. Prepare the Cherries

    Wash and pit the cherries. You can leave the cherries whole or cut them in half if you prefer. Spread the cherries evenly in a buttered 9-inch round baking dish or a similar-sized cast iron skillet.

  3. Make the Batter

    In a large mixing bowl, whisk together the eggs and granulated sugar until well combined and slightly frothy. Add the flour and salt, and whisk until smooth. Gradually add the milk while whisking continuously to ensure a smooth batter. Stir in the vanilla extract and melted butter until well combined.

  4. Pour the Batter Over the Cherries

    Pour the batter evenly over the cherries in the baking dish.

  5. Bake the Clafoutis

    Bake in the preheated oven for about 45-50 minutes, or until the clafoutis is puffed up and golden brown on top. A toothpick inserted into the center should come out clean.

  6. Cool and Serve

    Allow the clafoutis to cool for a few minutes. It will deflate slightly as it cools. Dust with powdered sugar if desired. Serve warm or at room temperature.

Tips

  • You can substitute other fruits such as berries, plums, or apples for the cherries if desired.
  • For a more traditional flavor, you can add a tablespoon of kirsch (cherry brandy) to the batter.
  • Clafoutis is best served the day it is made, but leftovers can be stored in the refrigerator for up to two days.
