Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably panko)
  • Salt and pepper, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (optional)
  • Vegetable oil, for frying
  • Lemon wedges, for serving

Instructions

  1. Prep the Chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to about ½ inch thick.
  2. Season: Season both sides of the chicken breasts with salt, pepper, garlic powder, and paprika.
  3. Set up Breading Station: In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs in the third.
  4. Bread the Chicken: Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, allowing any excess to drip off, and finally coat with breadcrumbs, pressing gently to adhere.
  5. Fry: In a large skillet, heat about ¼ inch of vegetable oil over medium-high heat. Once hot, add the breaded chicken in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
  6. Drain: Remove the schnitzels from the skillet and place on a paper towel-lined plate to drain excess oil.
  7. Serve: Serve hot with lemon wedges on the side and your choice of sides, such as a fresh salad or mashed potatoes.
