Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably panko)
- Salt and pepper, to taste
- ½ teaspoon garlic powder
- ½ teaspoon paprika (optional)
- Vegetable oil, for frying
- Lemon wedges, for serving
Instructions
- Prep the Chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to about ½ inch thick.
- Season: Season both sides of the chicken breasts with salt, pepper, garlic powder, and paprika.
- Set up Breading Station: In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs in the third.
- Bread the Chicken: Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, allowing any excess to drip off, and finally coat with breadcrumbs, pressing gently to adhere.
- Fry: In a large skillet, heat about ¼ inch of vegetable oil over medium-high heat. Once hot, add the breaded chicken in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
- Drain: Remove the schnitzels from the skillet and place on a paper towel-lined plate to drain excess oil.
