Ingredients
- 2 ducks (about 5 pounds each)
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 cup orange juice (freshly squeezed)
- 1 cup chicken broth
- 1/2 cup sugar
- 1/4 cup soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- 2 oranges (zested and segmented)
- Fresh cilantro (for garnish)
Instructions
- Prepare the Duck: Preheat the oven to 375°F (190°C). Rinse the ducks and pat them dry with paper towels. Rub the salt, pepper, garlic powder, and onion powder all over the ducks, including inside the cavity.
- Roast the Ducks: Place the ducks on a rack in a roasting pan. Roast for about 1 hour and 30 minutes, or until the skin is golden brown and crispy and the internal temperature reaches 165°F (75°C). Baste occasionally with the juices that collect in the pan.
- Make the Orange Sauce: While the ducks are roasting, combine the orange juice, chicken broth, sugar, and soy sauce in a saucepan. Bring to a boil, then reduce to a simmer for about 10 minutes. Add the cornstarch mixture and stir until thickened. Remove from heat and stir in the orange zest and segments.
- Serve: Once the ducks are done, let them rest for about 10 minutes before carving. Serve the crispy duck with the orange sauce drizzled over the top and garnish with fresh cilantro.
