Grilled Lamb Chops
Grilled Lamb Chops
Ingredients
- 8 lamb chops (about 1 inch thick)
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1/4 cup olive oil
- Salt and freshly ground black pepper to taste
- 1 lemon, cut into wedges (for serving)
Instructions
- Prepare the Marinade:
In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, and olive oil. Mix well until all ingredients are well incorporated.
- Marinate the Lamb Chops:
Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the lamb chops, making sure that each chop is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight for more flavor.
- Preheat the Grill:
Preheat your grill to medium-high heat (about 400°F or 200°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.
- Season the Lamb Chops:
Remove the lamb chops from the marinade and let any excess marinade drip off. Season both sides of the lamb chops generously with salt and freshly ground black pepper.
- Grill the Lamb Chops:
Place the lamb chops on the preheated grill. Grill for about 3-4 minutes on each side for medium-rare, or until the internal temperature reaches 145°F (63°C) for medium-rare. For medium, cook until the internal temperature reaches 160°F (71°C), which may take about 5-6 minutes per side. Cooking time may vary depending on the thickness of the chops and the heat of your grill.
- Rest the Lamb Chops:
Once the lamb chops are done, remove them from the grill and let them rest for about 5 minutes. This allows the juices to redistribute throughout the meat, making it more tender and juicy.
- Serve:
Serve the grilled lamb chops hot, with lemon wedges on the side for squeezing over the top. You can also serve them with a side of your choice, such as a fresh salad, roasted vegetables, or mashed potatoes.
Tips
- Marinating Time: The longer you marinate the lamb chops, the more flavorful they will be. Overnight marination is ideal.
- Grill Temperature: Make sure your grill is hot enough before placing the lamb chops on it. A hot grill helps to sear the outside of the chops, locking in the juices.
- Doneness: Use a meat thermometer to check the internal temperature of the lamb chops to ensure they are cooked to your desired level of doneness.
